The holiday season reminds me of mint chocolate, so I decided to make MINT Cacao Empower Bars with our baking mix. Just one small addition of peppermint extract makes this possible. One and a half teaspoons lends a flavorful twist that you are sure to love if you like this combination.
Here are the wet ingredients I used to make them:
- 2 beaten eggs
- 1/2 cup melted coconut oil
- 1/3 cup Lakanto monk fruit sweetened maple syrup
- 1 1/2 teaspoons peppermint extract
I know this might sound weird to some, but when I was at camp growing up, the counselors would give us peppermint patties and encourage us to put peanut butter on top. Feeling nostalgic, I spread some creamy peanut butter atop my mint Cacao Empower Bar and it was delicious. I highly recommend!
Mint Cacao Empower Bars

- large mixing bowl
- Whisk or spatula
Ingredients
- 1 Gratisfied Empower Bar Cacao baking mix see note
- 2 eggs beaten
- 1/2 cup oil like melted coconut oil or avocado oil
- 1/3 cup liquid sweetener see note
- 1 1/2 teaspoons peppermint extract
Instructions
- Preheat the oven to 350 degrees F. Line an 8×8 baking tin with parchment paper.
- In a large mixing bowl, whisk together the eggs, oil, liquid sweetener, and peppermint extract until creamy. Add the Empower Bar Cacao baking mix and use a large spatula or whisk to stir until combined and a dough is formed.
- Transfer the dough to the baking mix and bake for 20 minutes. Allow to cool for at least 30 minutes before slicing into 9 squares.
