‘Tis the season to be testing all of the pumpkin recipes! When it comes to writing a baking recipe, there are so many different levers you can pull. I have had so much fun lately seeing which gluten-free and grain-free flour combinations work best. When I polled people on Instagram asking if they would rather bake with a homemade Healthified blend of flours versus a pre-made baking mix, the response overwhelmingly leaned to the latter. I get it – often times we want more convenience, especially when it comes to baking. That’s where my Gratisfied Empower Bar baking mix comes into play, and while it is meant for homemade grain-free nutrition bars, it can do so much more. Therefore, I decided to create Empower Bar pumpkin muffins!
One of the best parts about baking is when something turns out better than expected. That is what happened with these muffins. Of course I knew they were going to be delicious, but I didn’t know how much the pumpkin spice would shine through, and getting creative with a baking mix made with a base of pumpkin seed flour, sunflower seed flour, unsweetened shredded coconut, and hemp hearts can be challenging. This combination is about as alternative as you can get. It completely veers off the traditional baking course. But that is why I created it!
I love these muffins so much, and for my two-year-old that loves the homemade Empower Bars, it is a good way to sneak some nutritious pumpkin puree into his diet. You can enjoy them plain, or might I suggest the easy 3-ingredient monk fruit glaze to drizzle on top.
Planning and prep
There is not much planning and prep you have to do for these Gratisfied pumpkin muffins. Simply ensure you have your Empower Bar baking mix on hand. Given that the batter is primarily made with seed flours, this step helps with moisture absorption and will lead to more rise, so don’t skip it!

Gratisfied Empower Bar Pumpkin Muffins {Grain-Free, Dairy-Free}

Ingredients
- 2 eggs, beaten
- ½ cup pure pumpkin puree
- ¼ cup unsweetened almond milk or dairy-free milk of choice
- ⅓ cup maple syrup
- 1 teaspoon vanilla extract
- 1 Gratisfied Empower Bar Original baking mix pouch see note
- 2 teaspoons pumpkin pie spice
- 1½ teaspoons baking powder
- ½ teaspoon sea salt
Instructions
- In a large mixing bowl, whisk together the eggs, pumpkin puree, almond milk, maple syrup and vanilla extract until creamy. Add in the baking mix, pumpkin pie spice, baking powder and sea salt. Stir until a batter is formed. Allow the batter to rest in the mixing bowl at room temperature for 30 minutes.
- Meanwhile, preheat the oven to 350 degrees F. Line a muffin tin with paper liners.
- Transfer batter to each muffin cup, filling each one to the top (makes about 8-9 muffins). Bake for 22 to 25 minutes or until a toothpick inserted in the center comes out clean. Allow the muffins to cool in the muffin tin for about 10 minutes until transferring to wire rack to cool completely (about 1 hour). Store in the refrigerator.
