Gratisfied Empower Bar Pumpkin Muffins {Grain-Free, Dairy-Free}

Add a little fall flavor to your Gratisfied Empower Bar baking mix, and make healthy grain-free muffins! Enjoy plain or with the Healthified 3-ingredient monk fruit glaze. Makes 8 to 9 muffins (depending on size) to enjoy for breakfast or a snack. Kid-friendly and approved!

Ingredients
  

  • 2 eggs, beaten
  • ½ cup pure pumpkin puree
  • ¼ cup unsweetened almond milk or dairy-free milk of choice
  • cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 Gratisfied Empower Bar Original baking mix pouch see note
  • 2 teaspoons pumpkin pie spice
  • teaspoons baking powder
  • ½ teaspoon sea salt

Instructions
 

  • In a large mixing bowl, whisk together the eggs, pumpkin puree, almond milk, maple syrup and vanilla extract until creamy. Add in the baking mix, pumpkin pie spice, baking powder and sea salt. Stir until a batter is formed. Allow the batter to rest in the mixing bowl at room temperature for 30 minutes.
  • Meanwhile, preheat the oven to 350 degrees F. Line a muffin tin with paper liners.
  • Transfer batter to each muffin cup, filling each one to the top (makes about 8-9 muffins). Bake for 22 to 25 minutes or until a toothpick inserted in the center comes out clean. Allow the muffins to cool in the muffin tin for about 10 minutes until transferring to wire rack to cool completely (about 1 hour). Store in the refrigerator.
