I am always looking for new ways to satisfy my afternoon sweet tooth. I would say that the reason I crave chocolate after both lunch and dinner these days is because I’m pregnant, but who am I kidding? This is an occurrence that happens like clockwork even when I am not pregnant. I love my sweets, what can I say?
The other day I wanted something different than a piece of dark chocolate. Typically this will do the trick, especially if I pair it with peanut butter and a Medjool date, but I decided to do a baking experiment instead. I had seen others on Instagram making healthier desserts using mashed banana, egg, and chocolate protein powder, so that is what I did. It worked! In under 20 minutes, I had a seemingly indulgent sweet treat hot from the oven. This is either a single-serve sweet treat, or divide between 2-3 servings depending on desired size.
After a successful taste test, I dolloped some peanut butter on top with some Hu Kitchen gems. Consider my sweet tooth satisfied.
My toddler loved it too, which I was happy about. He is super picky, so whenever I can figure out creative ways to get more protein (and eggs specifically) into his diet, it’s a win in my book (even if it disguised as chocolate).
With regards to the protein powder, I suggest chocolate with clean ingredients. I love Truvani brand, and used the chocolate peanut butter flavor for this recipe. That makes these muffins sweetened with mostly banana and some monk fruit (from the protein powder).
3-Ingredient Chocolate Protein Muffins
Equipment
- Medium mixing bowl
- muffin tin
Ingredients
- 1 medium banana mashed
- 1 egg beaten
- 1 scoop chocolate protein powder of choice
Instructions
- Preheat the oven to 350℉. Add 2-3 muffin liners to a muffin tin (or use one or a ramekin for a single serving).
- In a medium mixing bowl, whisk together the mashed banana, egg, and protein powder until a batter is formed (it will be thicker than regular muffin batter). Transfer the batter to the muffin tin, filling each liner halfway (or all the way to the top if using one).
- Bake for 15 to 18 minutes. Allow the muffins to cool for about 10 to 20 minutes. Enjoy!
