In the past, we have polled our Instagram audience to determine some healthy food favorites. Avocado, chocolate, and nut butter topped the list for many! The results inspired creativity in the kitchen, and these healthified fudgesicles came to life. They provide healthy fats, antioxidants, and the right amount of sweetness to curb your summer sweet tooth. Try these silicone popsicle molds!
Fudgesicles
Ingredients
- 1 can full fat coconut milk
- 1 ripe banana
- 2 tablespoons raw cacao powder
- 3 Medjool dates, pits removed
- ⅓ cup almond butter (or nut butter of choice)
- ¼ teaspoon vanilla extract
- ½ teaspoon cinnamon
- dash of sea salt
Chocolate Drizzle
- ¼ cup chopped high-quality dark chocolate
- 1 tablespoon coconut oil
Instructions
- Place all ingredients for the fudgesicles in a high-speed blender until creamy. Pour into popsicle molds and freeze overnight.
- The next day, add chopped chocolate and coconut oil to a small saucepan over medium-low heat. Cook until just melted, stirring frequently, about 2-3 minutes.
- Remove fudgesicles from molds and place on a baking sheet lined with parchment paper.
- Drizzle chocolate "sauce" on top. Drizzle should freeze immediately. Enjoy right away or store in the freezer.
