While I love recipe writing, I also enjoy recipe testing others’ healthified kitchen creations just the same. Amy Rains is a nutritionist and food blogger I admire, and I often seek out her meals for inspiration and planning. While I don’t attach a label to the way I eat, I do try to take a primarily plant-based approach (filling a plate with 75% plants!), so her recipe for this Indian Butter Cauliflower caught my eye. Colorful and flavorful, I knew I had to add it to my recipe rotation!
Whether you are a vegan or simply trying to add more veggies to your plate, this dish can serve as the main event or a side dish for your dinner. She recommends serving over rice or cauliflower rice, so I did a combination of both! You can’t have too much cauliflower.
