Protein Peanut Butter Vanilla Acai Smoothie

For a more blood sugar balancing option, make this acai smoothie at home rather than ordering a bowl from a juice bar.

  • High-speed Blender

Ingredients
  

  • 1 cup unsweetened milk of choice or water
  • 1/3 - 1/2 frozen banana
  • 1/2 cup frozen blueberries
  • 1/2 cup frozen pre-sliced zucchini or cauliflower rice
  • 1 scoop vanilla protein powder
  • 1/2 - 1 tablespoon peanut butter
  • 1 teaspoon acai powder or frozen acai packet; see note

Instructions
 

  • Place all ingredients in a high-speed blender until smooth and creamy.

Notes

Instead of acai powder, you can use a frozen acai packet (like Sambazon brand). If you do, decrease the amount of blueberries by at least 1/4 cup. Add more milk or water if needed until desired consistency is reached.
