Flourless Peanut Butter Blondies

These easy flourless peanut butter blondies are perfect for when you need to whip up something sweet for a gathering, or you simply want to satisfy your sweet tooth in a healthier way. All-natural peanut butter and pumpkin puree come together to offer plant-based nutrition, while low-glycemic coconut sweeteners make them more blood sugar balancing. Use any creamy nut butter of choice to mix it up. Loved ones will never know they are good for you!

Ingredients
  

  • 1 3/4 cups all-natural creamy peanut butter
  • 1/2 cup pumpkin puree
  • 1/3 cup maple syrup or coconut nectar
  • 1/4 cup coconut sugar
  • 2 tablespoons arrowroot starch or tapioca starch
  • 1 teaspoon vanilla extract
  • 1/2 cup dairy-free chocolate chips I love Hu Kitchen gems

Instructions
 

  • Preheat the oven to 350°F. Line an 8-by-8-inch baking sheet with parchment paper.
  • In a food processor, combine the peanut butter, pumpkin puree, maple syrup or coconut nectar, coconut sugar, starch, and vanilla extract. Blend until creamy. Add the chocolate chips and blend again until they are fully incorporated into the peanut butter mixture.
  • Using a spatula or large spoon, transfer the filling to the baking dish. Bake for 30 to 35 minutes until the edges are golden brown and have started to “pull away” from the baking dish. Allow the bars to completely cool in the baking dish, about 1-2 hours.
