Roasted Red Pepper Sauce

A versatile recipe to use as a dip, dressing, or pasta sauce. Flavorful and dairy-free.

Equipment

Ingredients
  

  • 1 red bell pepper quartered
  • 1/2 cup vegetable stock or chicken stock
  • 1/2 cup olive oil
  • 2 cloves garlic minced
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons tomato paste
  • 2 tablespoons Spero Foods "Goat" or sub goat cheese or vegan cheese of choice
  • 1/2 teaspoon sea salt

Instructions
 

  • Preheat the oven to 400 degrees. Line a baking sheet with parchment paper. Place the quartered bell pepper on the baking sheet and roast for 25-30 minutes, or until softened and starting to brown.
  • Place the roasted bell pepper in a blender with the remaining ingredients and puree until smooth.

Notes

Storage: store the sauce in an airtight container in the fridge for up to 1 week.
