Apple Thyme Crisp with Empower Bar Crumble

When our head of production filled me in on a recipe she created using crumbled Empower Bar on top of an apple crisp, I knew we needed to share it with you!

This is why I love these bars so much – they are so versatile. From being enough on their own in bar form to their delicious ability to dress up a dessert, you can’t go wrong. Not to mention they bring with them the beauty of blood sugar balance! I can attest to the fact that this crisp is tasty enough for a sweet treat, and nutritious enough for breakfast (mixed with some coconut yogurt!).

Apple Thyme Empower Bar Crumble

Ingredients
  

For the Crumble

  • 3 tablespoon coconut oil, soft
  • ¼ cup coconut sugar, brown sugar, or granulated sugar of choice
  • 8 oz Empower Bars (roughly 3 bars crumbled)
  • ½ cup roasted unsalted pepitas (i.e. pumpkin seeds)

For the Apple Filling

  • 2 honey crisp/pink lady apples (cored and rustic cut)
  • 2 granny smith apples (cored and rustic cut)
  • 1 tablespoon coconut sugar, brown sugar, or granulated sugar of choice
  • 1 tablespoon coconut oil, melted
  • teaspoons thyme leaves
  • 1 teaspoon cinnamon

Instructions
 

  • Preheat oven to 300 degrees.
  • Cream together 3 tablespoons coconut oil and ¼ cup coconut or brown sugar.
  • Mix in the crumbled Empower Bar and roasted pepitas.
  • Chill until needed.
  • Toss apples, fresh thyme, 1 tablespoon coconut or brown sugar, cinnamon and melted coconut oil.
  • Place apple filling in baking dish and top with crumble, make sure apples are completely covered.
  • Cover with foil and bake for 45 minutes (30 minutes if al dente apples are desired).
  • Remove foil and bake additional 15 minutes until deep golden brown – Enjoy!
